- “Bitter” is a British term for Pale Ale, not used in the US
- Naming convention has evolved over time
- A cask conditioned ale
- Three classifications, largely differentiated by ABV:
- Ordinary Bitter
- Best Bitter
- Strong Bitter
- Key ingredients:
- British pale malt (Maris Otter, Golden Promise, etc)
- British hops (primarily Fuggles)
- Yeast: fruity, lower-attentuated British varieties
- Additional ingredients:
- Caramel malts
- Invert sugar (easier for yeast)
- Restrained mineral content in the watter
- Parti-gyle method sometimes used to get multiple beers from one mash
