- Need to brew a beer that embodies that fruit in whatever way you feel appropriate
- Not a BJCP-judged competition – have fun!
Education Session: Fruit Beers – Presented by Howard C.
- Pro tip: fermented grapefruit juice tastes like burnt tire
- Also not recommend: Papaya, avocado
- Some fruit has pectin which causes haze – pectin enzyme (pectinaze) will help
- Many options: fresh fruit, frozen, puree, extract
- Recommend pasteurizing to kill off yeast/bacteria. Watch temperature – don’t boil to avoid pectin haze
- Add fruit to secondary after fermentation is complete
- Examples presented for citrus, cucumber
- Presentation slides will be shared on WoW website
